Penang Koay Teow Th'ng


Penang koay teow th'ng, this is a kind of noodle that Penang people eat every day.
The koay teow th'ng is rice noodle soup and in the bowl of noodle have fish ball,vegetable, and pork meat and sometimes even more like fish cake chicken meat and etc.
There is another kind of koay teow th'ng that is duck meat koay teow th'ng. This is a hit in Penang food also.

This koay teow th'ng is special because of the ingredients that they put in it to make the soup,and the clearness of the soup.The soup is almost as clear as water.
This bowl of noodle is delicious because of the smoothness of the soup,and the aroma from the clear soup.
The ingredient is remain top secret because the ingredients is pass down from generation to generation.But i manage to dig some information on the ingredient. For the recipe pls read below.

This is a light dish and it can be eaten at any time,breakfast,lunch and dinner and even supper.
Its easy to find this noodle in Penang, any stall selling this is delicious,but theres few only that is famous,theres one in Pulau Tikus.
If your looking for the duck meat koay teow th'ng, theres only one that is famous and its recipe is pass down from generation to generation that is in a cafe along Anson Road.
In KL theres one stall in Subang USJ,opposite Summit USJ,theres a row of shop lots, the stall is just along the shop lots.

the recipe:
in soup:pig thigh bone,anchovies,pepper,chicken stock

in the bowl: pork meat,fish ball, rice noodle,vegetable,and etc as you like

cooking methods is easy as 1,2,3.
just put all the pig bone(smash),anchovies,pepper(smash) in a cotton bag and just put into a pot of watter,bring it to a boil and slow down the fire, add chicken stock and simmer it about 2-3 hours then.Between the 2-3 hours cook the pork meat,fish ball and etc in the soup till the meat cook.
(rice noodle must cook separately in simmering water, just dip in the water about 15-20 second and shake it dry).

my recipe is the simple method of cooking this noodle soup,and it wont taste as delicious as the original,
