Penang Char Koay Teow


Let's start with Penang food first
Every ones know that Penang is a place that we can find good and delicious food.Just any stall beside the road side it or any shop selling food is just as good as it is. But in here I'm going to comment only on those that are really good and delicious.

When any one reach Penang, the first food they will go looking for is Char Koay Teow(fried rice noodle).
Char koay teow is famous in Penang because of the big big prawn they cook in it but its not about the prawn, a delicious char koay teow is about the control of the heat throughout the wok. In Penang, they fry the koay teow using charcoal, the reason they use the charcoal is because the heat is evenly distribute throughout the wok,and the koay teow is evenly cooked.

If using gas stove, the cook must know how to control the fire so that the koay teow is evenly cooked.
The other thing that make the koay teow delicious is the recipe of the sauce that they mix. They have theirs generation to generation recipe passed down from their grandfather or ancestors.
The last thing that make the koay teow delicious is the wetness of the koay teow.Normally we eat char koay teow it is dry, but in Penang the koay teow they fry is slightly wet,not too wet or soggy, its just nice.
The best place to eat char koay teow in Penang is in Song River Cafe, along Gurney Drive,
another is the famous Sister char koay teow is in Macalister Road/Perak Road junction,
and in PJ Chau Yang in Ah Lim Kopitiam,
